Crockpot Rotisserie Style Chicken
The days are very hot and dry here so we Alexander's, who have committed to not running our air conditioners this year, have been trying not to run the oven until at night when it is cooler and then do our baking. As a matter of fact I am up right now baking cookies in preparation for the Lord's Day tomorrow. Thankfully we do not meet until 2:30 due to sharing a building with another congregation. Shew! other wise it would be no cookies for the road. Anyways, back to these hot days and trying not to run the oven. Bree found a fantastic recipe for rotisserie style chicken that you make in the crockpot. It is so very very good! And . . . no hot oven, therefore no hot house! I thought I would share the recipe in hopes that it might be a blessing to you too!
Rotisserie Style Chicken
1 whole chicken that will fit in your crockpot ( ours was about 8 lbs in our 6 qt. crockpot)
2 tsp. salt
1 tsp. paprika
1 tsp. onion powder
1/2 tsp. dried thyme
1 tsp. italian seasoning
1/2 tsp. cayenne pepper
1/2 tsp. black pepper
Combine all of the ingredients in a bowl and rub mixture all over bird, inside and out. Place chicken breast side down in crockpot.
Inside the chicken place 4 whole garlic cloves and 1 quartered onion.
Do NOT add water.
Cover and cook on high for 4-5 hours or on low for 8 hours. The meat is done when it is fully cooked and has reached desired tenderness. The longer you cook it the more tender the meat is.
